Any season, but especially from Halloween to New Years Day, people can’t get enough pumpkin….pumpkin soup, muffins, coffee are just a few items we love to have in the fall. But, add this recipe to your file and you’ll be sure to enjoy it year round!
Ingredients: For coffee cake
Vanilla greek yogurt
Benofficial Pumpkin butter
For crumb topping
In a mug or ramekin, soften 2 T of butter. Do not fully melt
Again, in the mug/ramekin, mix in the white sugar with a fork until fluffy (approx.. 30 seconds)
Add the egg, and mix thoroughly
Stir in the yogurt
Mix in the flour and baking powder until you get a smooth batter
Mix in pumpkin butter
For the crumb topping: In a separate ramekin, mix together all the ingredients with your fingers until it becomes crumbly. Pour over the batter mixture in the mug/ramekin.
