chefAny season, but especially from Halloween to New Years Day, people can’t get enough pumpkin….pumpkin soup, muffins, coffee are just a few items we love to have in the fall. But, add this recipe to your file and you’ll be sure to enjoy it year round!

Ingredients: For coffee cake

Softened butter

White sugar

Whisked egg

Vanilla greek yogurt

Flour

Baking powder

Benofficial Pumpkin butter

For crumb topping

Softened butter

Flour

Brown sugar

cinnamon

 

In a mug or ramekin, soften 2 T of butter. Do not fully melt

Again, in the mug/ramekin, mix in the white sugar with a fork until fluffy (approx.. 30 seconds)

Add the egg, and mix thoroughly

Stir in the yogurt

Mix in the flour and baking powder until you get a smooth batter

Mix in pumpkin butter

For the crumb topping: In a separate ramekin, mix together all the ingredients with your fingers until it becomes crumbly. Pour over the batter mixture in the mug/ramekin.

Microwave on high for 2 ½ minutes (since all microwaves are different, keep an eye on it while it cooks, (It should puff up doubling in size) If it sinks, you cooked it too long.
