A delicious and easy recipe for a tasty treat any time of the day. Serves 12

1 ½ c Flour
½ c Brown Sugar
½ c Granulated Sugar
1 t Baking Soda
1 t Pumpkin pie spice
1h t Salt
2 Eggs
1 c Pumpkin Puree
1 1h c BenOfficial pumpkin butter
2 T Melted butter
1 t Vanilla extract


Preheat oven to 350, and grease a 9 x 5 loaf pan. In a bowl combine flour, sugars, baking
soda, pumpkin pie spice and salt. Mix dry ingredients. Next add eggs, pumpkin puree,
pumpkin butter, melted butter and vanilla extract and stir. Bake for 45-55 minutes.

Any season, but especially from Halloween to New Years Day, people can’t get enough pumpkin….pumpkin soup, muffins, coffee are just a few items we love to have in the fall. But, add this recipe to your file and you’ll be sure to enjoy it year round!

Ingredients: For coffee cake
¼ c
1/8 t
Softened butter
White sugar
Whisked egg
Vanilla greek yogurt
Baking powder
Benofficial Pumpkin butter

For crumb topping
Softened butter
Brown sugar

In a mug or ramekin, soften 2 T of butter. Do not fully melt

Again, in the mug/ramekin, mix in the white sugar with a fork until fluffy (approx.. 30 seconds)

Add the egg, and mix thoroughly

Stir in the yogurt

Mix in the flour and baking powder until you get a smooth batter

Mix in pumpkin butter

For the crumb topping: In a separate ramekin, mix together all the ingredients with your fingers until it becomes crumbly. Pour over the batter mixture in the mug/ramekin.

Microwave on high for 2 ½ minutes (since all microwaves are different, keep an eye on it while it cooks, (It should puff up doubling in size) If it sinks, you cooked it too long.

Boneless chicken breasts[Ingredient] Taco seasoning mix
Benofficial Salsa…any variety
Shredded cheddar cheese
Optional 2 T sour cream

Preheat oven to 375 degrees and place chicken on a greased baking pan. Mix taco seasoning mix with Benofficial salsa and pour over chicken.

Bake for 25-35 minutes

Remove from oven and sprinkle chicken with shredded cheese and bake an additional 2-4 minutes until cheese is melted. Top with sour cream if desired, and serve.

15 oz can light red kidney beans
15oz can dark red kidney beans

-Combine ground beef and onion and saute over medium heat for 10 minutes (drain grease)
-Add remaining ingredients mix well and simmer on low for 45-60 min

with Beet Vinaigrette

cider vinegar
vegetable oil
chicken bouillon granules
pound baby spinach
garlic powder
crumbled goat cheese

-Over, medium heat cook and stir the walnuts and sugar until sugar is caramelized and thoroughly coats the walnuts
-In a food processor, blend beets, vinegar, bouillon, garlic sugar salt and pepper. Then gradually add oil.
-toss spinach and sugar-coated walnuts and drizzle beat mixture over salad. Sprinkle with Goat cheese

chefApple Butter Pork Loin

boneless pork loin roast ¼ c brown sugar
apple juice 2 T water

ground cinnamon

-Place pork loin in roasting pan, salt to taste, pour apple juice over the pork and bake covered in 350 degree oven
-Cook 30 minutes. In the meantime, mix Benofficial Goods apple butter, brown sugar, water and cinnamon and make into a paste
-Take out pork, spread with Apple butter mixture, recover and cook an additional 15-30 minutes.

Chicken Bites

1 8 oz jar
olive oil 1 8 oz can pineapple chunks
skinless, boneless chicken breasts (cut into small chunks) 1 dash salt and pepper

of chili sauce



-heat olive oil in saucepan and cook chicken chunks for 5 minutes
-reduce heat and pour in preserves and chili sauce, stirring occasionally for 10 min
-mix pineapple chunks into the pan and season with salt and pepper. Continue cooking for an additional 2-5 minutes until fully heated.
-serve using toothpicks
